Biscuits- Low Carb and Grain Free

BiscuitGrainFreeSo today I had some leftover cream in the fridge. I love whipped cream, and I desperately wanted something as a base for my whipped cream.  I am currently cutting down on my carbohydrate intake and did not want anything with arrowroot as the carbs are a little high. So I decided that I will make biscuits and make up the recipe as I go along. They turned out great and for this reason I have decided to share them here.

Ingredients

  1. Heat the oven to 200°C and line two baking trays with baking paper
  2. Add all the ingredients together and mix well. I use a Thermomix.
  3. Thin with warm water if the batter is to thick.
  4. Spoon blobs of batter on the baking tray and flatten. to form a biscuit.
  5. Bake for about 25min or until just browning.
  6. These taste great by themselves or with a variety of toppings.
Recipe Notes

I ate these topped with sweetened cream. I sweetened the cream with Xylitol. We have decided that we will not be using Xylitol, but as I still have 2kg in the pantry I decided that it will do no harm to use Xylitol as a one off.

So these were surprisingly great and the family loved them.  Just thought I would share.
