Butter Chicken

Another one of our family favorites. I especially love butter chicken as my kids love this dish. Even the fussy six year old.  I always prefer chicken thigh to breast. The meat is just so much better. The only time I would buy breast is if they are on special.

Ingredients

Instructions
  1. Dry fry the cumin and fennel until fragrant. Then grind to a powder in a coffee grinder, or similar. Set aside
  2. In a large pan heat the ghee and oil.
  3. Mince the garlic, ginger and onion in a food processor and fry for 2 to 3minutes
  4. Puree the tomatoes and cashews in the food processor
  5. Add all the ingredients to the pan, and use one tbs of the fennel/cumin powder.
  6. Cook for about 25min
  7. Add another tbs of ghee, the remaining cumin/fennel and a spoonful of garam masala
  8. Serve on cauli rice or mash, or steamed cabbage and garnish with a little fresh parsley
