Paleo Grain-free Granola

Breakfast can be a pain when you are cooking everything from scratch. At our place we mosly have eggs, but on those days when we are in a bit of a rush, it is good to have this easy Paleo Grain-free Granola/Muesli mix on hand.  With sunflower seeds, walnuts and coconutflakes toasted in coconut oil, it keeps you feeling satisfied for hours.

And the best part is…our teenage sons love it!

  1. Preheat oven to 120°C
  2. Remove pits from dates, and soak in boiling water for 20 minutes.
  3. Meanwhile, in a large bowl combine sunflower seeds, walnuts, and dried coconut. Transfer two-thirds of this mixture to a food processor and pulse to a coarse crumb in your food processor (do not go past this or it will turn to butter). Return crumbed mixture to the bowl with the whole nuts, seeds, and coconut.
  4. While it's still hot, add dates and soaking water to the food processor (no need to clean first) and blend until smooth. Add nut butter, tahini, vanilla, and coconut oil and pulse until smooth again.
  5. Pour the date mixture over the crumbed and whole dry ingredients and stir well to combine, ensuring everything is nicely coated.
  6. Spread mix over a baking paper lined tray and bake in the preheated oven for 45-75 minutes - depending on how thinly you've spread it. Break it up and stir every 15-20 minutes so it dries evenly. You want the mixture to be golden, but not overcooked.
  7. Cool completely on the tray and then store in an air-tight container.
Recipe Notes

Serve with milk of choice. We like coconut or almond milk.
